Tzatziki

Ingredients

  • 0.75 cucumber, shredded and squeezed
  • 1 teaspoon kosher salt, divided
  • 4 cloves garlic
  • 1 teaspoon white vinegar
  • 1 tablespoon extra virgin olive oil
  • 2 cups Greek yogurt
  • 1 tablespoon dill, chopped (optional)
  • 0.25 teaspoon peppercorn

Steps

  1. Grate cucumbers using a box grater or food processor. Toss with 0.5 tsp salt. Squeeze dry in cheesecloth or napkin to remove excess liquid.
  2. In a mixing bowl, combine garlic with remaining 0.5 tsp salt, white vinegar, and olive oil.
  3. Add grated cucumber to garlic mixture. Stir in yogurt, pepper, and fresh herbs if desired.
  4. Cover and refrigerate 30 minutes to 2 hours before serving to thicken and allow flavors to blend.
  5. Stir before serving, transfer to bowl, drizzle with additional olive oil if desired. Serve with vegetables, pita chips, or pita wedges.
