Tzatziki
Ingredients
- 0.75 cucumber, shredded and squeezed
- 1 teaspoon kosher salt, divided
- 4 cloves garlic
- 1 teaspoon white vinegar
- 1 tablespoon extra virgin olive oil
- 2 cups Greek yogurt
- 1 tablespoon dill, chopped (optional)
- 0.25 teaspoon peppercorn
Steps
- Grate cucumbers using a box grater or food processor. Toss with 0.5 tsp salt. Squeeze dry in cheesecloth or napkin to remove excess liquid.
- In a mixing bowl, combine garlic with remaining 0.5 tsp salt, white vinegar, and olive oil.
- Add grated cucumber to garlic mixture. Stir in yogurt, pepper, and fresh herbs if desired.
- Cover and refrigerate 30 minutes to 2 hours before serving to thicken and allow flavors to blend.
- Stir before serving, transfer to bowl, drizzle with additional olive oil if desired. Serve with vegetables, pita chips, or pita wedges.
