Ingredients

  • 1.5 cups ripe bananas, well-mashed (approximately 3 large bananas)
  • 0.25 cup avocado oil (may substitute vegetable oil)
  • 0.25 cup butter, melted and cooled at least 5 minutes
  • 0.5 cup sugar
  • 0.5 cup light brown sugar, tightly packed
  • 2 large eggs, room temperature preferred
  • 0.25 cup buttermilk, room temperature preferred
  • 1 tablespoon vanilla extract
  • 2 cups unbleached all-purpose flour
  • 1.5 teaspoons baking powder
  • 0.5 teaspoon baking soda
  • 0.5 teaspoon kosher salt

Streusel Topping (Optional)

  • 0.5 cup unbleached all-purpose flour
  • 0.5 cup brown sugar
  • 0.25 teaspoon kosher salt
  • 0.25 cup cold butter

Steps

  1. Preheat oven to 425°F (220°C); line muffin tin with paper liners.
  2. Mash bananas thoroughly in large bowl.
  3. Add oil and melted butter; stir well.
  4. Stir in both sugars until combined.
  5. Add eggs, buttermilk, and vanilla; stir well.
  6. In separate bowl, whisk together flour, baking powder, baking soda, and salt.
  7. Gently fold dry ingredients into wet batter (avoid overmixing).
  8. Fill muffin liners 0.75 full.
  9. For streusel: combine flour, brown sugar, and salt; cut in cold butter until crumbly. Sprinkle evenly over muffins.
  10. Bake at 425°F for 8 minutes, then reduce to 350°F (175°C) without opening oven; bake 7-8 additional minutes until toothpick comes out clean.
  11. Cool before serving.
