Potato Pancakes
Ingredients
- 1 medium onion
- 1 small leek
- 2 pounds potatoes
- 1 egg
- 2 tablespoons flour
- 0.5 teaspoon kosher salt
- 0.5 teaspoon nutmeg
Steps
- Peel and finely grate the onion. Clean, wash, and thinly slice the leek. Wash, peel, and medium-to-finely grate potatoes. Squeeze out potato juices through cheesecloth into a bowl. Once starch settles, drain liquid and combine with starch and grated potatoes.
- Mix eggs, flour, grated onion, and leek into potatoes until combined. Add more flour if needed. Season with salt, pepper, and nutmeg to taste.
- Heat frying oil in a large pan. Using a tablespoon, add small portions of mixture, flatten into pancake shapes, and fry both sides until golden.
- Serve hot. Pairs well with apple puree.
