Potato Pancakes

Ingredients

  • 1 medium onion
  • 1 small leek
  • 2 pounds potatoes
  • 1 egg
  • 2 tablespoons flour
  • 0.5 teaspoon kosher salt
  • 0.5 teaspoon nutmeg

Steps

  1. Peel and finely grate the onion. Clean, wash, and thinly slice the leek. Wash, peel, and medium-to-finely grate potatoes. Squeeze out potato juices through cheesecloth into a bowl. Once starch settles, drain liquid and combine with starch and grated potatoes.
  2. Mix eggs, flour, grated onion, and leek into potatoes until combined. Add more flour if needed. Season with salt, pepper, and nutmeg to taste.
  3. Heat frying oil in a large pan. Using a tablespoon, add small portions of mixture, flatten into pancake shapes, and fry both sides until golden.
  4. Serve hot. Pairs well with apple puree.
