Jen's Egg Salad

Ingredients

  • 6 large eggs
  • 0.25 cup mayonnaise
  • 2 teaspoons German mustard
  • 1 teaspoon lemon juice
  • 0.25 teaspoon sea salt
  • Peppercorns, freshly ground
  • 0.25 cup red onion, finely diced
  • 1 tablespoon chives, chopped
  • 0.25 cup dill, chopped
  • 1 teaspoon capers (optional)

Steps

  1. Hard boil the eggs. Peel and chop.
  2. In a medium bowl, whisk together the mayonnaise, mustard, lemon juice, salt, and several grinds of pepper.
  3. Mix in the onions, then fold in the eggs, chives, dill pickles, and capers.
  4. Cover and chill in the refrigerator for 20 minutes. Stir, then season to taste and serve.
