Jen's Egg Salad
Ingredients
- 6 large eggs
- 0.25 cup mayonnaise
- 2 teaspoons German mustard
- 1 teaspoon lemon juice
- 0.25 teaspoon sea salt
- Peppercorns, freshly ground
- 0.25 cup red onion, finely diced
- 1 tablespoon chives, chopped
- 0.25 cup dill, chopped
- 1 teaspoon capers (optional)
Steps
- Hard boil the eggs. Peel and chop.
- In a medium bowl, whisk together the mayonnaise, mustard, lemon juice, salt, and several grinds of pepper.
- Mix in the onions, then fold in the eggs, chives, dill pickles, and capers.
- Cover and chill in the refrigerator for 20 minutes. Stir, then season to taste and serve.
