German Apple Pancake
Ingredients
- 0.5 cup unbleached all-purpose flour
- 1 tablespoon sugar
- 0.5 teaspoon kosher salt
- 2 large eggs
- 0.67 cup half and half
- 1 teaspoon vanilla extract
- 2 tablespoons butter
- 3 large apples, peeled, cored, sliced 0.25 inch thick
- 0.25 cup packed brown sugar
- 1 teaspoon ground cinnamon
- 0.5 teaspoon nutmeg
- 1 teaspoon fresh lemon juice
- 0.25 cup raisins (optional)
- 0.25 cup chopped pecans (optional)
Steps
- Preheat oven to 500°F.
- Combine flour, sugar, salt in one bowl; whisk eggs, cream, vanilla in another; mix wet and dry ingredients.
- Heat butter in cast iron skillet, add apples with brown sugar, nutmeg, cinnamon; cook 10 minutes until golden; add lemon juice, raisins, pecans; pour batter over apples; reduce oven to 425°F; bake 18 minutes until edges brown.
- Loosen edges with spatula, invert onto serving platter, cut into wedges, serve.
