Easy Olive Garden Zuppa Toscana Soup

Ingredients

  • 1 pound hot italian sausage
  • 4 tablespoons butter
  • 0.5 onion, diced
  • 1 tablespoon garlic, minced
  • 6 cups chicken broth
  • 2 cups water
  • 4 yellow potatoes, cut into 1-inch pieces
  • 3 teaspoons kosher salt (or to taste)
  • 1 teaspoon peppercorn
  • 2 cups heavy cream
  • 4 cups kale, chopped

Steps

  1. Sauté sausage in a large pot for 5-6 minutes until browned. Remove with slotted spoon to a plate.
  2. In the same pot, add butter and sauté onions over medium heat until translucent. Add garlic and sauté for 1 minute until fragrant.
  3. Add chicken broth, water, potatoes, salt, and pepper; bring to boil. Boil until potatoes are tender. Stir in kale and heavy cream. Add sausage back. Taste and adjust seasonings. Serve with grated parmesan cheese and/or bacon if desired.
