Easy Chicken Piccata
Ingredients
- 2 large chicken breasts
- 0.25 teaspoon garlic powder
- Flour for dredging
- 4 tablespoons butter, divided
- 1 tablespoon olive oil
- 0.25 cup chicken broth
- 1 tablespoon lemon juice with zest
- 1 tablespoon capers
- 0.5 cup heavy cream
- Parsley, chopped fresh (optional for garnish)
Steps
- Slice chicken breasts lengthwise to create 4 thin cutlets; trim fat. Season with salt, pepper, and garlic powder. Coat in flour.
- Heat 2 tablespoons butter with olive oil in a skillet over medium-high heat.
- Cook chicken 4-5 minutes per side until golden. Transfer to plate.
- Remove pan from heat. Add broth, lemon juice, zest, remaining 2 tablespoons butter, and capers. Scrape up browned bits.
- Stir in cream; return to heat. Add chicken back when bubbling resumes. Simmer 5 minutes until cooked through.
- Garnish with parsley and/or parmesan cheese as desired.
