Easy Chicken Piccata

Ingredients

  • 2 large chicken breasts
  • 0.25 teaspoon garlic powder
  • Flour for dredging
  • 4 tablespoons butter, divided
  • 1 tablespoon olive oil
  • 0.25 cup chicken broth
  • 1 tablespoon lemon juice with zest
  • 1 tablespoon capers
  • 0.5 cup heavy cream
  • Parsley, chopped fresh (optional for garnish)

Steps

  1. Slice chicken breasts lengthwise to create 4 thin cutlets; trim fat. Season with salt, pepper, and garlic powder. Coat in flour.
  2. Heat 2 tablespoons butter with olive oil in a skillet over medium-high heat.
  3. Cook chicken 4-5 minutes per side until golden. Transfer to plate.
  4. Remove pan from heat. Add broth, lemon juice, zest, remaining 2 tablespoons butter, and capers. Scrape up browned bits.
  5. Stir in cream; return to heat. Add chicken back when bubbling resumes. Simmer 5 minutes until cooked through.
  6. Garnish with parsley and/or parmesan cheese as desired.
