Creamed Spinach

Ingredients

  • 750 grams spinach
  • 2 liters water, lightly salted
  • 1 ice water bath
  • 2 tablespoons butter
  • 1 small onion
  • 2 cloves garlic
  • 4 teaspoons vegetable broth, dissolved in a little water
  • 150 milliliters heavy cream
  • 2 tablespoons flour
  • Kosher salt to taste
  • Cracked pepper to taste
  • Nutmeg to taste

Steps

  1. Wash spinach until water runs clear.
  2. Bring salted water to boil in large pot.
  3. Add spinach in portions; boil 30-60 seconds.
  4. Transfer immediately to ice water bath; discard cooking water.
  5. Cool spinach, transfer to colander, press by hand to remove excess water.
  6. Dice onion and heat butter in pot.
  7. Fry onions until translucent; press garlic in, fry 30 seconds.
  8. Add spinach and stir.
  9. Add broth and cream; stir.
  10. Cook several minutes, then blend with immersion blender.
  11. Mix flour with cold water; stir into spinach.
  12. Season with salt, pepper, and nutmeg to taste.
  13. Serve with potatoes/mashed potatoes and fried or boiled egg.
