Creamed Spinach

Ingredients
- 750 grams spinach
- 2 liters water, lightly salted
- 1 ice water bath
- 2 tablespoons butter
- 1 small onion
- 2 cloves garlic
- 4 teaspoons vegetable broth, dissolved in a little water
- 150 milliliters heavy cream
- 2 tablespoons flour
- Kosher salt to taste
- Cracked pepper to taste
- Nutmeg to taste
Steps
- Wash spinach until water runs clear.
- Bring salted water to boil in large pot.
- Add spinach in portions; boil 30-60 seconds.
- Transfer immediately to ice water bath; discard cooking water.
- Cool spinach, transfer to colander, press by hand to remove excess water.
- Dice onion and heat butter in pot.
- Fry onions until translucent; press garlic in, fry 30 seconds.
- Add spinach and stir.
- Add broth and cream; stir.
- Cook several minutes, then blend with immersion blender.
- Mix flour with cold water; stir into spinach.
- Season with salt, pepper, and nutmeg to taste.
- Serve with potatoes/mashed potatoes and fried or boiled egg.
