Classic Crepes
Ingredients
- 2 tablespoons butter, melted, plus extra to grease the pan
- 1.25 cups milk
- 1 cup unbleached all-purpose flour
- 1 tablespoon maple syrup
- 1 teaspoon vanilla extract
- 0.25 teaspoon kosher salt
- 2 large eggs
Steps
- Combine all ingredients in a blender and pulse for 5 seconds. Scrape down sides, then pulse another 5-10 seconds until smooth. Batter should resemble heavy cream; adjust with milk or flour as needed.
- Cover and refrigerate for 30 minutes up to 36 hours.
- Melt 0.25 tablespoon butter in an 8-10 inch sauté pan over medium heat. Pour 0.25 cup batter into center, immediately tilt and swirl to form a large circle. Cook about 1 minute until edges brown slightly, then flip. Cook 45-60 seconds and transfer to a plate. Repeat with remaining batter, adding butter as needed.
- Serve warm with your preferred fillings and toppings.
